Memorial Day

Memorial Day Weekend is a time for us to remember those who have served our country and given their lives for our freedoms.

Memorial Day also marks the beginning of Summer, backyards and barbecues. With the warmer weather, we lighten up our meals with in season vegetables and fruits from our gardens.  Strawberries are just one of the many that come to mind when creating desserts and snacks for after dinner enjoyment.  Picking Strawberries at one of several of the Berry Farms such as The Berry Patch or the Chesterfield Berry farm is a tradition for many Richmond families.  Once the berries are picked and washed, this creative and colorful Fruit Salsa is a hit with children and adults alike.

Fruit Salsa

1 lb strawberries- diced

2 Granny Smith apples- peeled & diced
2 kiwis- peeled & diced
1 container raspberries- cleaned
Juice of 1 lemon
3 heaping tablespoons of strawberry preserves
2 tablespoons packed brown sugar
In a large bowl combine apples and lemon juice. Stir to combine. Let sit 2 minutes. Add
strawberries, raspberries and kiwi. In a small bowl stir together preserves and brown sugar well.
Pour down over fruit. Mix well. Allow to sit at room temperature 15 minutes before serving.
Serve with graham crackers or vanilla oreo cookies and enjoy!
